Fini enters the fish-filled pasta segment:

Smoked Salmon Ravioli and Shrimp & Lemon Zest Girasoli

Launching in October 2026, two new fillings join the *Antica Bottega* and *Le Ricette Italiane Gourmet* lines: featuring creamy, clean-tasting recipes, a rough and porous pasta sheet, and carefully selected ingredients, these products aim to capture a share of a segment that is currently small but growing rapidly.

A segment that is still relatively small—yet holds significant growth potential—is meeting strong consumer demand as shown by market research: fresh fish-filled pasta. Fini Pasta Fresca is entering this space in October 2026 with two high-potential new products.

The fish-filled pasta market has been experiencing years of strong growth and consumer interest. Fini has chosen to seize this opportunity with two complementary recipes—one mainstream and one with a more gourmet positioning: Smoked Salmon Ravioli (from the *Antica Bottega* line) and Shrimp & Lemon Zest Girasoli (from the *Le Ricette Italiane Gourmet* line).

The first new product introduces a smoked salmon filling to the *Antica Bottega* range; smoked salmon is an ingredient enjoying a strong growth trend and currently represents the leading segment within fish-filled pasta. Fini interprets this trend with a recipe offering a distinctive, clean, and appetizing flavor profile that stands out from existing market offerings. The filling features a high content of smoked salmon, made creamy through a blend of ricotta and cream. The recipe maintains a simple, clean composition with few ingredients, while the pasta itself upholds a signature element of Fini’s products: a rough, porous sheet made from 100% Italian flour and eggs, designed to better hold sauces and enhance the tasting experience. This product will be available in 250g packs, with a recommended retail price of €3.49, starting in October 2026.

Alongside its mainstream offering, Fini is also expanding its *Le Ricette Italiane Gourmet* line with a recipe designed for consumers seeking more sophisticated flavor combinations: *Girasoli* (sunflower-shaped pasta) with Shrimp and Lemon Zest. The star of the filling is the cold-water shrimp, chosen for the quality of its meat—tender with a naturally sweet, delicate flavor. The recipe pairs the shrimp with lemon zest, creating a gourmet-inspired combination reminiscent of pairings found in seafood restaurants. Here, too, Fini emphasizes a high content of the key ingredient, combined with a creamy texture achieved using ricotta and heavy cream. The recipe features a short list of ingredients, while the rough, porous pasta dough is made using 100% Italian flour and eggs. This product will be sold in 250g packs at a recommended retail price of €3.69, with a launch scheduled for October 2026.

The decision to enter the seafood segment with two distinct products follows a clear market strategy: to appeal both to consumers looking for a familiar, widely popular flavor like salmon and to those interested in a more distinctive culinary experience. *Antica Bottega* Smoked Salmon Ravioli targets the mainstream seafood-filled pasta segment by focusing on an ingredient experiencing strong growth, whereas *Le Ricette Italiane Gourmet* Shrimp and Lemon Zest *Girasoli* elevate the offering through a gourmet pairing and the use of cold-water shrimp, prized for their delicate taste and tender meat. Two distinct interpretations, united by the same production philosophy that defines Fini Pasta Fresca: simple, clean recipes; a focus on ingredient quality; creamy fillings; and a rough, porous pasta sheet made from 100% Italian flour and eggs.
