Italian Cacciatore Salami on the Rise: Sales, Growth, and Sliced Products

Production rose by 7.9%, sales increased by 5%, and exports grew by 19%

The Italian Cacciatore Salami Consortium closed out 2025 with significant growth. With approximately 4.2 million kilograms processed in 2025, compared to nearly 3.9 million in 2024 (source: IFCQ Certifications), production increased by 7.9%. Sales rose by 5%, driven by a 19% increase in exports, thanks primarily to the pre-sliced meat in trays, which — due to its practicality, ease of use, and convenient sizes (trays available in 60, 80, and 100 g formats) — is particularly popular abroad, recording a remarkable growth surge of 47%.

Overseas sales now account for 39% of the total certified volume, compared to a 34% share recorded in 2024.

In terms of distribution channels in Italy, large-scale retail (GDO) dominates with a 60% share, followed by discount stores at 34% and traditional retail (Normal Trade) at 6%.
