Finocchiona PGI: a positive 2025 for production and sales

The queen of Tuscan cured meats closes an extremely positive 2025, in which quality and strong territorial identity are confirmed as assets on which the strategic positioning of the product and the distinctive elements recognized by consumers are based

Finocchiona, the scent of Tuscany. A scent that is increasingly appreciated by consumers. In fact, 2025 was the year with the highest volume of sausage production: 2,550,000 kilograms of mixture ready to become Finocchiona PGI once cured.

For the first time, the designation broke through the 1 million sausage barrier, stopping just above 1 million 36,000 pieces (+5.73% compared to 2024) and confirming positive growth of +11% in processed product over the last five years (2021-2025). This production translates into solid growth in certified products placed on the market (1 million 960 thousand kilograms), equal to +4.79% compared to the previous year. The overall figure for vacuum-packed products is also back on the rise, closing — after a decline in 2024 — with double-digit growth (+15%), reaching 738,000 kilograms packaged.

Looking at exports, Finocchiona in 2025 confirms essentially unchanged figures for 2024 by macro-area, but with interesting points for reflection when analyzing the performance of individual countries.

First and foremost is the launch of exports to the United States of America. This result was celebrated by the Consortium, which immediately seized the opportunity by presenting the product at the most important event in the US: the Summer Fancy Food Show in New York (its presence has already been confirmed for the 2026 edition).
