Italy has a unique dairy heritage: each region has its own varieties, linked to the territory, local traditions and specific production methods. In many cases, customs and cheeses are intertwined. With just three ingredients – milk, salt and rennet – our country produces around 500 different cheeses (at least those registered), each with its own flavour, texture and maturation period.
