The Salami Oscar for Bettella Ancient Pork Salami

On the occasion of the Festa del Salame Cremona, every year a deserving company is awarded an award that rewards the work done to enhance this salami. The 2024 edition awards the Salame Oscar to the Salame Antico di Maiale Tranquillo®, which represents a true heritage of authentic flavors. It is prepared with meat from 24-month-old pigs, whose weight reaches 350 kg. The sweet wait; as Bettella teaches, is the true secret of quality: only through patience and respect for natural rhythms can you rediscover an ancient, rich and inimitable flavor.
The parts used to prepare this salami are the loin and the fillet, to which are added the trimmings of all the noble cuts of the pig, namely culatello, fiocco, coppa and shoulder. The recipe is completed by the fatty parts, which are fundamental in this salami, as they retain all the typical aromas of the curing, including white wine, very little garlic, spices and peppercorns.
The processing of Salame Antico di Maiale Tranquillo® is done manually, without the use of colorants and starters. After the meat is stuffed into the pig's natural casing, it is slowly matured in a particular microclimate, which allows the aromas to amplify their intensity and at the same time to uniformly impregnate the meat.
It is this subtle balance of flavors that makes Salame Antico di Maiale Tranquillo® unique in its kind, characterized by an unmistakable delicacy. Each slice tells of the effort, pride and satisfaction of those who have chosen to go against the grain, recovering those values that were once the basis of our diet: authenticity, patience and respect for nature and the cycle of time.
Salami is a symbol of joy, conviviality and also of a healthy and tasty snack: therefore during the award ceremony, Salame di Maiale Tranquillo® will not only find a moment to be told by those who produce it, Stefano and Giuseppe Bettella, but also to be tasted. And what better pairing, in addition to bread, also a glass of good wine? To best enhance the scents and aromas of our salami, we have chosen a classic, timeless, Lambrusco “Vigna del Cristo” from Cantina Cavicchioli, told by Stefania Vitullo, ambassador of the Cavicchioli winery.
“Vigna del Cristo” is a pure Lambrusco di Sorbara, and it is the history of Lambrusco in Modena. Born with the 1987 harvest to celebrate sixty years of Cantina Cavicchioli, it is obtained from grapes coming from the 5-hectare vineyard of the same name in the Cristo area, within the DOC territory of Sorbara. Vigna del Cristo is the expression of the quality of this grape variety and is the example of the stylistic code of the winery: a Lambrusco that is always modern, unique and, at the same time, faithful to tradition.
