Antica Macelleria Falorni from Greve in Chianti (FI) will participate in the 17th edition of Taste Firenze, organised by Pitti Immagine, from 3 to 5 February at the Fortezza da Basso, with new and classic products from the Tuscan tradition.
The novelty that it will present at the Taste Firenze fair will be a plunge into the past: in fact, the butcher's shop now offers rolled pancetta with a minimum seasoning of 300 days, but which can reach 900 days. This type of bacon is a historical product, as it was made centuries ago: as always characterised by the choice of raw material, handmade, with a typical hand-tie. The bacon, with its fragrant taste and smell, flavoured with salt and natural aromas, is left to rest for a long time in the Falorni cellars, in the so-called Prosciuttaia.
Among the protagonists of the Falorni counter will be the Finocchiona IGP, awarded the “Cinque Spilli” of the Guida Salumi d’Italia 2023. Another new product from Falorni presented at Taste will be the “Astuccio” for the Prosciutto di Cinta Senese DOP.
