API will meet at the Confagricoltura stand (Hall D), on Sunday 6 April, at 2 p.m., for a guided tasting combined with wines selected by AIS, the Italian Sommelier Association (limited places).
Fish has always been one of the best allies of wine at the table. The Associazione Piscicoltori Italiani (Italian Fish Farmers' Association), which represents over 90% of the peninsula's aquaculture companies, cannot therefore miss the appointment at Vinitaly, from 6 to 9 April, where it will present excellent products from farms in various regions.
In addition to a number of appearances at tastings together with other partners, API will be holding a meeting at the Confagricoltura stand (Hall D) on Sunday 6 April, at 2.00 pm, for a guided tasting paired with wines selected by AIS, the Italian Sommelier Association (limited places).
The title of the meeting is ‘Aquaculture treasures’: the spotlight will be on minor species, the flagship of a sector that in Italy has more than 25 species reared in different environments: a unique case of biodiversity on the European scene.
The cold-smoked fillets of carpione del Garda, a virtuous example of recovery and valorisation to the benefit of the entire production area, will be presented as an absolute preview. ‘The carpione is one of the most prized species of our territory, at risk of extinction,’ says Matteo Leonardi, president of API. Thanks to the commitment of fish farmers, today we can bring it back to the tables in an innovative guise, without losing its identity'.
There will be no shortage of Italian caviar, with record numbers: 65 tonnes per year, more than 85% destined for export, and a now consolidated European leadership. The product, appreciated in high-end kitchens and in the most demanding markets, today represents one of the symbols of national fish excellence. There will be two types on tasting, plus a fillet of smoked Beluga sturgeon.
A marinated Arctic char and a fillet of cold-smoked salmon rainbow trout (trout from Trentino PGI) complete the tasting experience.
This event will be flanked by other tasting, training and promotional events with the provincial Unions and regional Federations of Confagricoltura.
