The structure of the Italian pig slaughter industry reveals a significant shift in the composition of animals destined for the various production sectors.
In recent years, the number of pigs slaughtered that meet the requirements for PDO/PGI production has fallen, whilst the number of other pigs slaughtered – calculated as the difference from the total number of national slaughterings – has risen.
A five-year comparison (2020–2025) therefore reveals two opposing trends:
