The market for fresh cuts weighs on the profitability of slaughtering, while the profitability gap between PDO and generic cured hams improves
A slight improvement in the profitability of Italian farmers engaged in the closed cycle was observed in May. According to the Crefis index (www.crefis.it), the month-on-month increase was 0.9%, driven mainly by the recovery of heavy slaughter pig prices, which rose by 1.5% compared to April to reach EUR 1.920/kg. However, compared to the same month in 2024, the situation remains less favourable, with profitability down by 5% and prices down by around 3% year-on-year.
