Raising the maximum carcass weight of pigs used in PDO production from 168 to 180 kg
The Parma Ham Consortium records an important result in support of its sector and the qualitative and distinctive character of its product.
With the ministerial decree of 7 May, published in the Official Gazette of the Italian Republic on the 16th, an amendment to the Production Specifications came fully into force, which envisages raising the maximum carcass weight of pigs used in the production of the PDO from 168 to 180 kg. As a result, the sector will now be able to count on a greater availability of pigs and fresh hind legs of a significant size, suitable for long maturation.
